150 grams frozen chopped spinach

1 cup cottage cheese

½ tablespoon olive oil

½ teaspoon garlic powder

¼ teaspoon onion powder

salt and black pepper to taste

¼ cup red bell pepper chopped, optional

tablespoon cheese of choice shredded

 teaspoon red pepper flakes optional for spice


Instructions

  1. Preheat the air fryer to 400°F so it’s ready by the time your dip is assembled.
  2. Defrost the spinach by placing it in the fridge overnight, on the counter for a few hours, or microwaving for 2–3 minutes. Once thawed, squeeze out all excess moisture using a cheesecloth, paper towel, or small strainer.
  3. Blend the base by adding cottage cheese, olive oil, garlic powder, onion powder, salt, pepper, and red pepper flakes to a blender or food processor. Blend until smooth and creamy.
  4. Assemble the dip by pouring the blended mixture into a greased 8-oz oven-safe ramekin. Fold in the drained spinach and chopped red bell pepper (if using) until well combined.
  5. Top with shredded cheese and air fry for 5 minutes, or until the top is bubbly and golden brown. Carefully remove—it will be hot!
  6. Serve warm with pita chips, crackers, sliced veggies, or anything scoopable for a balanced, crave-worthy snack.

Notes
