Description

This easy cottage cheese flatbread is soft, flexible, and packed with protein—made with just cottage cheese, eggs, and simple seasoning. It’s low-carb, gluten-free, and perfect for wraps, pizza bases, or healthy meal prep.

Ingredients

Scale

1 cup cottage cheese

2 eggs

1 tsp salt

1/2 tsp oregano

Instructions

  1. Preheat oven to 350F and line a baking sheet with parchment paper and spray with cooking spray.
  2. Into the bowl of a blender, add in 1 cup cottage cheese, 2 eggs, and seasoning. Blend until smooth.
  3. Pour the mixture onto the baking sheet and allow it to spread out. Bake in oven for 40 minutes and then allow to fully cool! This is a crucial step that can’t be skipped or your wrap will fall apart!

Notes

Be sure to let the cottage cheese flatbread cool completely before removing it from the baking sheet. Skipping this step can cause the flatbread to tear or fall apart—cooling helps it firm up and hold its shape perfectly.
