Ingredients
- 1 cup cottage cheese
- 2 Tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 cup fine almond flour
- 1 Tablespoon natural peanut butter , or almond butter
- ¼ cup vanilla protein powder, I used Nuzest
- ½ cup chocolate chips
Instructions
Add the cottage cheese, maple syrup, and vanilla extract to a blender or food processor. Blend until the mixture is completely smooth and creamy.
Pour the blended mixture into a medium bowl. Stir in the almond flour, protein powder, and peanut butter until everything is fully combined.
Fold in the chocolate chips gently, making sure they’re evenly distributed throughout the dough.
Serve immediately, or refrigerate for a firmer texture.
Notes
Any variety of cottage cheese will work for this recipe. If you’re using small curd, start with less almond flour, as it tends to release less liquid and can make the dough firmer more quickly.
