These crispy cottage cheese chips are the ultimate high-protein, low-calorie snack made with just one main ingredient. Perfectly seasoned and oven-baked, they’re easy to customize and ready in under an hour.   • 1 cup small curd cottage cheeseI used 4 %, good culture brand

Optional ingredients

  • 1 teaspoon onion powder
  • teaspoons Everything but the bagel seasoning

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine 1 cup of small curd cottage cheese with 1 teaspoon of onion powder (optional). Stir well to evenly blend the seasoning into the curds.
  3. Using a tablespoon, scoop the cottage cheese mixture onto the prepared baking sheet, spacing each portion about 1 inch apart.
  4. Gently flatten each scoop with the back of the spoon to form even, round chips. This helps them bake uniformly and crisp properly.
  5. Sprinkle 2 teaspoons of Everything But The Bagel seasoning over the top of each chip (if using).
  6. Bake in the preheated oven for 30 to 40 minutes, or until the chips begin to turn golden brown around the edges. Start checking after 25 minutes, as oven times may vary.
  7. Once baked, remove the tray from the oven and let the chips cool completely—about 10 to 15 minutes—before lifting them off the parchment. They’ll firm up as they cool.
  8. Serve and enjoy with your favorite dip, such as tzatziki, Greek yogurt, or your own custom creation.

Notes

For best results, make sure to strain the cottage cheese well to remove any excess liquid. Blotting it with a paper towel after straining helps the chips bake up crispy instead of soggy.

We used 4% milk fat small curd cottage cheese, which gave a great balance of creaminess and crispiness. You can also use 2% or full-fat cottage cheese—full-fat tends to produce slightly richer, crunchier chips if you don’t mind the added fat.
