Ingredients
- 1 1/2 cups whipped cottage cheese
- 1 cup almond butter
- 1 cup cocoa powder
- 2/3 cup + 2 tablespoons sugar
Instructions
- Preheat your oven to 350°F (180°C) and line an 8×8-inch baking pan with parchment paper.
- In a large mixing bowl, whisk together the whipped cottage cheese, almond butter, cocoa powder, and sugar until the batter is smooth and glossy.
- If using chocolate chips or chunks, gently fold them into the batter.
- Pour the batter into the prepared pan, spread it evenly, and top with extra chocolate if desired.
- Bake for 25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Cool completely in the pan before slicing.
Notes
Cottage Cheese Tip: I prefer using whipped cottage cheese because it blends smoothly into the batter. If you only have regular cottage cheese, just blend it until creamy before mixing.
Mix-Ins: I used ½ cup of chopped chocolate in the batter, but feel free to add up to 1 cup of your favorite mix-ins like chocolate chips, nuts, or even peanut butter swirls.
