This high-protein cottage cheese bread is soft, moist, and made without flour or added sugar. It’s quick to prepare, blender-friendly, and perfect for both sweet and savory toppings. Ingredients
2 cups cottage cheese
1½ cups rolled oats
4 eggs
2 tbs olive oil
1 tbs baking powder
1/4 tsp salt
Instructions
- Preheat your oven to 350°F and line a 9×5-inch loaf pan with parchment paper for easy removal.
- Drain the cottage cheese as much as possible to remove excess liquid, then discard the liquid.
- Add all ingredients to a blender or food processor and blend until mostly smooth. Pour the batter into your prepared pan. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean. If the top starts to brown too quickly, loosely cover it with foil during the last 15 minutes of baking.
- Let the bread rest in the pan for 5 minutes. Then carefully transfer it to a wire rack and cool for another 10 minutes before slicing and serving.
Notes
Store the bread in an airtight container at room temperature or in the refrigerator for up to 5 days.
No blender? No problem. You can mix the ingredients in a bowl by hand—it’ll still turn out great.
If you’re substituting oats, use almond flour or all-purpose flour instead, but reduce the amount to 1 cup plus 3 tablespoons.
