Description

This high-protein cottage cheese bread is soft, moist, and made without flour or added sugar. It’s quick to prepare, blender-friendly, and perfect for both sweet and savory toppings. Ingredients

2 cups cottage cheese

 cups rolled oats

4 eggs

2 tbs olive oil

1 tbs baking powder

1/4 tsp salt


Instructions

  1. Preheat your oven to 350°F and line a 9×5-inch loaf pan with parchment paper for easy removal.
  2. Drain the cottage cheese as much as possible to remove excess liquid, then discard the liquid.
  3. Add all ingredients to a blender or food processor and blend until mostly smooth. Pour the batter into your prepared pan. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean. If the top starts to brown too quickly, loosely cover it with foil during the last 15 minutes of baking.
  4. Let the bread rest in the pan for 5 minutes. Then carefully transfer it to a wire rack and cool for another 10 minutes before slicing and serving.

Notes

Store the bread in an airtight container at room temperature or in the refrigerator for up to 5 days.

No blender? No problem. You can mix the ingredients in a bowl by hand—it’ll still turn out great.

If you’re substituting oats, use almond flour or all-purpose flour instead, but reduce the amount to 1 cup plus 3 tablespoons.
