- 2 teaspoon olive or avocado oil

- 1 pound lean ground beef, I like 90/10
- 2-3 Tablespoons taco seasoning, adjust to taste
- 2 Tablespoons water, if needed
- 1 cup cottage cheese, I like good culture
- 1 avocado, chopped
- 4 teaspoons hot honey
- hot sauce
- pickled onions and/or hot and sweet jalapeños
Instructions
- Preheat your oven to 400°F. In a large bowl, toss the cubed sweet potatoes with olive oil, sea salt, black pepper, and garlic powder until evenly coated. Spread them out on a baking sheet in a single layer and roast for 20 minutes, flipping halfway through. For crispier results, you can use an air fryer instead.
- While the sweet potatoes are roasting, heat a skillet over medium-high heat. Add the ground beef, breaking it apart with a spatula as it cooks. Sauté until fully browned, about 6 to 7 minutes. Stir in the taco seasoning and a splash of water, if needed, to keep the beef juicy and flavorful.
- To assemble your bowls, divide the roasted sweet potatoes into four servings. Top each with the seasoned ground beef, a generous scoop of cottage cheese, and fresh avocado chunks. Finish with a drizzle of hot honey and a splash of hot sauce, if desired. Serve warm and enjoy!
